Director of Food & Beverage (a wine expert) for an Exclusive Luxury Resort Club in the Caribbean
This world class resort and private membership club is located in one of the largest islands in the Caribbean, this resort club Nestled in one of the most pristine islands is renowned for offering unparalleled luxury, world-class service, and extraordinary culinary experiences. Featuring multiple high-end dining outlets, bespoke beachside service, and private events, this destination is a benchmark for exclusivity and refinement. We are seeking an accomplished Director of Food & Beverage to lead the dynamic team and elevate the guest experience to even greater heights.
Position Overview
The Director of Food & Beverage will be responsible for the strategic leadership and operational management of all food and beverage outlets across the resort. This includes fine dining, casual beachside venues, bars, in-room dining, private events, and exclusive member functions. The successful candidate will have a proven track record of excellence in high-end, multi-outlet properties, with particular expertise in team leadership, service training, wine knowledge, and island operations.
This is not a culinary-focused role; rather, we seek a seasoned leader and trainer who understands the art of hospitality and can inspire, supervise, and refine a large, diverse service team. The successful candidate will work closely with an exceptional culinary team and must excel in front-of-house operations, service standards, and member/guest relations.
Key Responsibilities
• Oversee the day-to-day operations of all food and beverage outlets, ensuring service excellence and operational efficiency.
• Lead, develop, and mentor a large front-of-house team, with a strong emphasis on training and service etiquette.
• Collaborate closely with Executive Chef and kitchen leadership to ensure smooth coordination between kitchen and service teams.
• Maintain and elevate service standards to exceed the expectations of our discerning guests and members.
• Drive continuous improvement in guest satisfaction scores and member experience.
• Develop and manage budgets, financial targets, and cost control across all F&B departments.
• Ensure compliance with health, safety, and hygiene standards in all F&B outlets.
• Curate and manage an exceptional wine and beverage program, including staff training and cellar management.
• Be a visible presence on the floor, especially during peak service periods and VIP events.
• Work collaboratively with resort leadership to plan and execute high-profile functions, events, and private experiences.
Qualifications & Experience
• Minimum 8–10 years of leadership experience in food & beverage within luxury resorts, private clubs, or high-end hospitality environments.
• Strong background in multi-outlet operations, including fine dining, bars, beach venues, and private events.
• Proven ability to train, supervise, and motivate large service teams.
• Deep understanding of Caribbean resort operations, with prior island experience strongly preferred.
• Exceptional knowledge of wines, spirits, and beverage programs; WSET certification or equivalent is highly desirable.
• Strong financial acumen; able to develop and manage budgets, P&L, and inventory controls.
• A calm, polished, and confident leadership style with an innate passion for hospitality.
• Experience in exclusive, member-driven or high-net-worth clientele environments is a distinct advantage.
• Culturally aware and adaptable, with the ability to work collaboratively in a diverse, multinational team environment.
